What to do
Make the waffle dough:
- In a food processor, add the chickpeas and garlic and pulse until roughly chopped. Add the beets, red onion, salt, spices, cilantro, and lemon juice and pulse until finely minced. Transfer to a bowl and fold in the chickpea flour and water. Mixture should be able to form a disc when pressed.
Make the dressing:
- In a small bowl, whisk together the tahini, olive oil, lemon juice, orange juice, honey and salt until smooth and creamy.
- Add the garlic clove, if desired, and lightly macerate into dressing. Set aside
Make the waffles:
- Heat a waffle iron to medium and spray or brush the top and bottom with oil. Divide the falafel dough into 4 equal portions.
- Flatten out each portion into a disc and set across the center of the waffle iron. Press iron down and cook for 4 to 5 minutes, or until lightly browned and crispy on the edges. Be sure to not overcook.
- Serve waffles hot with sliced avocado, sliced love beets, chopped cucumber, red onion, pea sprouts, and olives. Drizzle with the citrus-tahini dressing and sprinkle with sesame seeds and ground sumac just before serving.

Waffles
1 cup dried chickpeas, (soaked in 4 cups water + 1 tbsp lemon juice for atleast 12 hours)
1 clove garlic
1 (8.8 oz) package Love Beets Organic Cooked Beets (with their juice)
1 tbsp chopped red onion
1 tsp sea salt
1 tsp black pepper
1 tsp smoked paprika
1½ tsp cumin
½ tsp coriander
½ tsp cinnamon
1/8 tsp cayenne pepper
½ bunch cilantro leaves
2 tbsp fresh lemon juice
1/3 cup garbanzo bean flour
3 tbsp water
Citrus-Tahini Drizzle
1 tbsp smooth tahini
1 tbsp extra-virgin olive oil
3 tbsp fresh lemon juice
3 tbsp fresh orange juice
½ tsp honey
¼ tsp sea salt
1 small clove garlic, crushed
Optional Toppings:
Sliced Love Beets, Avocado, Cucumber, Red onion, Pea shoots, Green olives, Cilantro, White sesame seeds and ground sumac for sprinkling
