Beet Falafel Waffles

Prep Time: 10 min // Cook Time: 5 min Servings: 4 Waffles

What to do

Make the waffle dough:

  1. In a food processor, add the chickpeas and garlic and pulse until roughly chopped. Add the beets, red onion, salt, spices, cilantro, and lemon juice and pulse until finely minced. Transfer to a bowl and fold in the chickpea flour and water. Mixture should be able to form a disc when pressed.

Make the dressing:

  1. In a small bowl, whisk together the tahini, olive oil, lemon juice, orange juice, honey and salt until smooth and creamy.
  2. Add the garlic clove, if desired, and lightly macerate into dressing. Set aside

Make the waffles:

  1. Heat a waffle iron to medium and spray or brush the top and bottom with oil. Divide the falafel dough into 4 equal portions.
  2. Flatten out each portion into a disc and set across the center of the waffle iron. Press iron down and cook for 4 to 5 minutes, or until lightly browned and crispy on the edges. Be sure to not overcook.
  3. Serve waffles hot with sliced avocado, sliced love beets, chopped cucumber, red onion, pea sprouts, and olives. Drizzle with the citrus-tahini dressing and sprinkle with sesame seeds and ground sumac just before serving.
