What to do
- In a small bowl, whisk together the Spicy Mayo ingredients until smooth. Taste, and if you would like it spicier, add an additional tbsp sriracha.
- Divide the rice between 2-3 wide, shallow bowls. Top with sliced cucumber, edamame, avocado, watermelon radish, and Perfectly Pickled beets. Sprinkle with furikake, sesame seeds, and drizzle with spicy mayo. Enjoy!
What you’ll Need
- 1 package Love Beets Perfectly Pickled Beets
- 2 cups white rice, cooked
- 3 Persian cucumbers, sliced
- 1 cup edamame, shelled
- 1 avocado, sliced
- 1 small watermelon radish, thinly sliced
- Optional topping; sesame seeds, furikake, toasted sesame oil
Spicy Mayo:
- 1⁄4 cup mayo
- 1-2 tbsp sriracha
- 1⁄2 tsp rice vinegar
- Juice of 1⁄2 a lime
- 1 tsp coconut aminos
- 1⁄2 tsp toasted sesame oil
