What to do
- In medium saucepan, cook beets, brown sugar, orange juice and vanilla extract over medium heat 10 to 12 minutes or until liquid is reduced by half, stirring occasionally. Let stand 10 minutes. Liquid will continue to thicken as mixture cools.
- Meanwhile, preheat outdoor grill or grill pan for direct grilling over medium-high heat. Lightly spray peaches with cooking spray. Transfer peaches to grill and cook 4 to 6 minutes or until peaches start to soften, turning and rotating occasionally.
- Place peaches on serving platter and dollop each peach half with a tablespoon of mascarpone. Spoon beets and their syrup over peaches. Sprinkle with mint and serve immediately.
