What to do
- In a small bowl add mustard, honey, salt, and pepper. Stir continuously with a whisk while slowly adding olive oil. Add a splash of apple cider and stir until combined. Set aside.
- On a large plate arrange arugula, beets, peaches, cherries and burrata.
- Top off with fresh thyme, pine nuts, salt, pepper, and the vinaigrette.
- Enjoy!

- 4 oz container of arugula
- 1 container of burrata
- 1 container of Love Beets Perfectly Pickled Beets
- 1-2 peaches, sliced
- 2 tbsp pine nuts, roasted
- ⅓ cup cherries, halved
- Fresh thyme
- Vinaigrette:
- 1 tbsp dijon mustard
- 1 tbsp raw honey
- ¼ cup olive oil
- ½ tbsp apple cider vinegar
- Salt and pepper
