What to do
- Place arugula, peaches, beets and burrata onto large plate or bowl. Add fresh mint leaves and sliced pieces of baguette to edges.
- Cut open burrata and drizzle with olive oil and white balsamic vinegar. Season with salt and pepper and sprinkle pepitas over salad for extra crunch!

- 5 oz bag of arugula
- 1 fresh peach, sliced
- 1 package of Love Beets White Wine Balsamic Marinated Beets, sliced
- 2 balls of burrata
- Handful of fresh mint leaves
- 2 tbsp salted pepitas
- 2 tbsp olive oil
- 2 tbsp white balsamic vinegar
- Optional: fresh baguette, sliced
