Best with White Wine Balsamic 

Peachy Beet and Burrata Salad

Servings: 2-3

What to do

  1. In a small bowl add mustard, honey, salt, and pepper. Stir continuously with a whisk while slowly adding olive oil. Add a splash of apple cider and stir until combined. Set aside.
  2. On a large plate arrange arugula, beets, peaches, cherries and burrata.
  3. Top off with fresh thyme, pine nuts, salt, pepper, and the vinaigrette.
  4. Enjoy!

What you’ll Need

  • 4 oz container of arugula
  • 1 container of burrata
  • 1 container of Love Beets Perfectly Pickled Beets
  • 1-2 peaches, sliced
  • 2 tbsp pine nuts, roasted
  • ⅓ cup cherries, halved
  • Fresh thyme
  • Vinaigrette: 
  • 1 tbsp dijon mustard
  • 1 tbsp raw honey
  • ¼ cup olive oil
  • ½ tbsp apple cider vinegar
  • Salt and pepper
