Best with White Wine Balsamic 

Peachy Beet & Burrata Salad

Servings: 2-3

What to do

  1. Place arugula, peaches, beets and burrata onto large plate or bowl. Add fresh mint leaves and sliced pieces of baguette to edges.
  2. Cut open burrata and drizzle with olive oil and white balsamic vinegar. Season with salt and pepper and sprinkle pepitas over salad for extra crunch!
  3. Enjoy!

What you’ll Need

  • 5 oz bag of arugula
  • 1 fresh peach, sliced
  • 1 package of Love Beets White Wine Balsamic Marinated Beets, sliced
  • 2 balls of burrata
  • Handful of fresh mint leaves
  • 2 tbsp salted pepitas
  • 2 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • Optional: fresh baguette, sliced
