Roasted Carrots & Beets with Dill Yogurt Sauce

What to do

  1. Peel and cut ½-lb carrots diagonally into 1” pieces. Toss the carrots in a bowl with avocado oil and bake at 400 degrees F for 45-50 minutes.
  2. While the carrots are roasting, mix together the yogurt, olive oil, fresh dill and lemon juice. Spread on a serving plate.
  3. Once the carrots are cooked, add to the serving plate and top with beets and balsamic glaze. Garnish with pistachios and more fresh dill. Serve immediately and enjoy!

  • ½ lb carrots
  • 1 tbsp. avocado oil
  • 1 tsp. lemon zest
  • 2 tsp. honey
  • ⅛  tsp. salt
  • ¼ tsp. black pepper

  • 1 tbsp. balsamic glaze
  • 2 tbsp. raw unsalted pistachios, roughly chopped
Lemon dill yogurt mixture:
  • ¾ cup plain 0% (fat-free)greek yogurt
  • 1 tbsp. olive oil
  • Juice of ½ a lemon 
  • 2 tbsp. fresh dill, roughly chopped
