What to do
- Drain and rinse the cans of jackfruit. Use a fork to “pull” it like you would do for pulled pork or chicken, and be careful to remove any hard pieces or bulbs.
- Heat a small skillet to a medium and add enough olive oil to generously coat the surface. Transfer the jackfruit to the hot skilled and cooked 2 to 3 minutes, stirring occasionally, until the jackfruit is somewhat crispy.
- Add barbecue sauce and bring the mixture to a gentle boil. Reduce the heat and simmer for 10 minutes, adding more sauce if necessary. Taste for flavor and add sauce or sea salt as needed.
- Divide the jackfruit between two toasted buns, along with a generous amount of Smoky BBQ Shredded Beets and mixed greens. Enjoy!
