BBQ “Pulled Pork” Sandwiches

What to do

  1. Drain and rinse the cans of jackfruit. Use a fork to “pull” it like you would do for pulled pork or chicken, and be careful to remove any hard pieces or bulbs.
  2. Heat a small skillet to a medium and add enough olive oil to generously coat the surface. Transfer the jackfruit to the hot skilled and cooked 2 to 3 minutes, stirring occasionally, until the jackfruit is somewhat crispy.
  3. Add barbecue sauce and bring the mixture to a gentle boil. Reduce the heat and simmer for 10 minutes, adding more sauce if necessary. Taste for flavor and add sauce or sea salt as needed.
  4. Divide the jackfruit between two toasted buns, along with a generous amount of Smoky BBQ Shredded Beets and mixed greens. Enjoy!
