Beet Coconut Smoothie Bowls

What to do

  1. Prepare fresh fruit for blending by chopping into 1/2 inch cubes
  2. Add all ingredients to a high powered blender and pulse until thick and smooth.
  3. Pour mixture into two bowls, and top with fresh berries, granola, flaked coconut, and/or plain yogurt.

What you’ll Need

For bowls:
1 cup fresh, ripe strawberries
1/2 cup fresh blueberries
1 large ripe banana, peeled and frozen
1 large Love Beets cooked beet
5 ice cubes
1/2 cup light coconut milk
2 teaspoons pure maple syrup or honey

For serving:
Fresh mixed berries
Granola
Flaked or shredded coconut
Plain yogurt
