Garlic Ginger Veggie Stir Fry

What to do

  1. In a small bowl, whisk together the marinade for the beets. Add the chopped beets and let sit at least 15 minutes (overnight is best!).
  2. In a large skillet or wok, eat olive oil to medium high.
  3. Add the onion, broccoli, bell pepper, and carrots. Stir well, cover, and cook until vegetables have softened and turned vibrate (about 8-10 minutes).
  4. Add the squash and beets, including the marinade. Cook, stirring frequently, until vegetables have reached desired level of “done-ness.” Taste for flavor and add salt/liquid animus to taste.
  5. Serve stir fry over cooked rice or quinoa.

1/2 yellow onion, sliced

1 medium crown broccoli, chopped into florets

1 red bell pepper, cut into match sticks

2 large carrots, peeled and sliced into diagonals

1 large yellow squash, chopped

Cooked white or brown rice for serving

1 tablespoon balsamic vinegar

2 tablespoons fresh ginger, peeled and grated

5 large cloves garlic, minced
