What to do
- In a small bowl, whisk together the marinade for the beets. Add the chopped beets and let sit at least 15 minutes (overnight is best!).
- In a large skillet or wok, eat olive oil to medium high.
- Add the onion, broccoli, bell pepper, and carrots. Stir well, cover, and cook until vegetables have softened and turned vibrate (about 8-10 minutes).
- Add the squash and beets, including the marinade. Cook, stirring frequently, until vegetables have reached desired level of “done-ness.” Taste for flavor and add salt/liquid animus to taste.
- Serve stir fry over cooked rice or quinoa.
