Monochrome Veggie Bowl

What to do

  1. To prepare the cauliflower, sweet potato and beetroot wash vegetables and preheat oven to 400 degrees Fahrenheit.
  2. Cut cauliflower and sweet potato into smaller pieces, add avocado oil and season with salt and pepper. Spread onto a baking sheet.
  3. Wrap beetroot in foil and add onto the baking sheet. Bake all of the vegetables  in the oven for about 30 minutes until veggies are crispy and beetroot is cooked through.
  4. Peel beetroot and cut into smaller pieces. Assemble in a bowl with the rest of the ingredients. Enjoy.

1 cup pickled red cabbage

1 package Love Beets mild vinegar beets

1 cup kidney beans (cooked)

1 cauliflower head

1 purple sweet potato

1 red beetroot (medium sized)

2 tbsp avocado oil

Salt and pepper
