Watermelon Beet Pizza

What to do

  1. Cut the watermelon disc into 6 wedges and set onto a serving platter. Top with the crumbled cheese, sliced beets, raspberries, and sliced red onion. Sprinkle over arugula leaves, sunflower sprouts, and basil leaves. Drizzle over olive oil and balsamic vinegar. Season with salt and pepper, and enjoy immediately!

What you’ll Need

1 round watermelon disc, sliced 1” thick

½ cup goat milk feta cheese, crumbled

½ cup Love Beets White Wine + Balsamic Beets, thinly sliced

¼ cup golden raspberries

2 tbsp red onion, thinly sliced

½ cup arugula leaves

½ cup sunflower sprouts, ends trimmed

¼ cup fresh basil

1 tbsp extra-virgin olive oil

3 tbsp thick and syrupy balsamic vinegar, for drizzling
