What to do
- Preheat the oven to 425 degrees Fahrenheit and prepare a baking sheet with parchment paper.
- Brush 2 tbsp of olive oil on baguette slices and bake in the oven for about 5 minutes or until golden brown.
- In a small bowl combine diced beets, vinegar, 2 tbsp of olive oil, salt and pepper.
- Spread toasted baguette slices with cream cheese. Arrange beets over baguette slices, top with toasted pecans and rosemary and drizzle with honey. ENJOY!

1 French baguette (10 1 inch slices)
1 package Love Beets cooked beets, diced
4 tbsp olive oil
2 tbsp apple cider vinegar
2 tbsp raw honey
½ cup vegan cashew cream cheese
¼ cup chopped roasted pecans
Salt and pepper
Garnish: rosemary sprigs
