Beet & Walnut Dip

What to do

  1. Add all of the ingredients except for olive oil to a food processor. Turn the food processor on the let it run until the mixture is thick and creamy.
  2. Leaving the food processor on, slowing incorporate the olive oil through the top of the mixer. Process until well combined.
  3. Taste for flavor, and add more cider vinegar or sea salt accordingly. If the dip needs to be thinned out at all, slowing incorporate more olive oil.
  4. Serve with pita bread, vegetable crudité, or on your favorite sandwich.

1 cup raw walnuts
1/3 cup olive oil
1 cup grated parmesan cheese
2 tablespoons apple cider vinegar
1 clove garlic, minced
1/4 teaspoon sea salt, or to taste
