Chocolate Beet Truffles

What to do

  1. In a food processor, combine the beets, yogurt, maple syrup, and vanilla.
  2. Blend until smooth.
  3. Add the coconut flour and salt.
  4. Process to form a dough.
  5. Roll into balls.
  6. Freeze for 2 hours (or longer) until firm.
  7. Coat in melted chocolate, top with sprinkles, and refrigerate until set. Enjoy!

1/3 cup (105g) maple syrup

1 tsp vanilla extract

Pinch of salt

2/3 cup (80g) coconut flour

1 cup (170g) dark chocolate chips, melted
