Red Wine Braised Beet Salad

What to do

  1. Preheat oven to 375°F.
  2. Add all of the ingredients for the braised beets to a small casserole dish. Stir well, cover with foil, and bake on the center rack for 15 to 20 minutes, or until red wine is very fragrant.
  3. Add the olive oil and spinach to a medium-sized skillet, cover, and heat to medium.
  4. Cook, stirring occasionally, until spinach has wilted (3-5 minutes).
  5. Serve beets over spinach with goat cheese, pumpkin seeds, and cracked black pepper.

1/4 cup red wine

1/4 red onion, finely chopped

3 cloves garlic, minced
