Shaved Brussels Sprouts Salad with Pears, Beets, and Gorgonzola

What to do

  1. Rinse the Brussels sprouts well. Chop off the rough end then thinly slice them from tip to tail. Transfer shaved Brussels sprouts to a mixing or serving bowl.
  2. Add the chopped pear, beets, and gorgonzola cheese to a bowl with the shaved Brussels sprouts.
  3. Ina  small bowl, stir together the orange zest, orange juice, cider vinegar, olive oil, and sea salt. Pour this dressing over salad and toss until everything is evenly coated.
  4. Taste for flavor and season with additional salt to taste.

1 pound Brussels sprouts, trimmed and shaved

1 large Bosc pear, chopped

1 (8.8-ounce) package Love Beets Organic Cooked Beets, chopped into wedges

1/3 cup gorgonzola cheese

Zest 1 orange

1 tablespoon orange juice

2 tablespoons cider vinegar

3 tablespoons olive oil

1/2 teaspoon sea salt, or to taste
