Strawberry-Beet and Grapefruit Gummies

What to do

Line a sheet of parchment paper perfectly into a 9 x 9 inch square pan or casserole dish, leaving a paper overhang off the sides.

Make Layer 1:

Blend all ingredients together for the strawberry-beet layer in a high speed blender until smooth. Transfer to a medium saucepot and bring to a boil, whisking almost constantly, until thickened and a candy thermometer reads 210-215 F, about 10 to 12 minutes. Pour mixture evenly into prepared pan and let chill in the freezer for 15 minutes while making the next layer.

Make Layer 2:

Repeat the same steps for the grapefruit layer. Blend until smooth and return to the same saucepot and cook until a candy thermometer reads 210-215 F. Pour the grapefruit layer over the strawberry beet layer and let sit in the fridge for 1 hour or until chilled and solidified.

Make the Sugar Coating:

Fill a medium bowl with sugar. Using your fingertips, rub the split vanilla bean and grapefruit zest into the sugar until evenly distributed.

To Serve:

Use a large chef knife to cut the gummies into squares, cutting strips vertically, then cutting strips horizontally. Gummy layers may separate slightly when slicing but will seal together again (once cut) if let to air dry at room temperature for an hour. Drop a few cut squares into the sugar mixture and serve immediately.

** Sugar coating will start to evaporate “weep” within minutes across the surface of gummies, best to dust with sugar just before serving. These will keep well, covered, for up to 1 week in the fridge.

Grapefruit Layer

1 tbsp grated grapefruit zest (+ 2 tbsp for grapefruit sugar coating)

3¼ cups freshly squeezed grapefruit juice, with pulp

1/3 cup granulated cane sugar

3 tbsp agar agar powder

Vanilla Grapefruit Sugar

2 cups granulated cane sugar or sanding sugar

1 vanilla bean, split lengthwise

2 tbsp grated grapefruit zest
