What to do
- In a small bowl add greek yogurt, shredded cucumber, garlic, dill, lemon juice, olive oil, salt and pepper. Stir well and set aside.
- On a large serving plate add butter lettuce, chickpeas, sliced beets, cucumbers, figs, and feta.
- Top off with tzatziki, fresh herbs, salt, pepper and a drizzle of olive oil.
- Serve with toasted pita bread and enjoy immediately.
