There’s nothing wrong with looking forward to Superbowl Sunday solely for the food: it’s the one day of the year that kitchen counters and coffee tables can dazzle the crowds with a cornucopia of “snack” foods. Superbowl Sunday is small bites’ time to shine, and we’ve got some excellent recipe suggestions to enhance your standard buffalo chicken dip and salsa line-up.
Lamb & Sweet Chili Beet Sliders with Feta
It might be too cold to get the grill fired up, but that’s no reason to deprive yourself of a juicy game day burger! To make this twist on the classic cheeseburger more “eating off your lap while sitting on the couch” friendly, we recommend rolling 2oz patties and buying slider buns instead of full-size ciabatta rolls. The sweetness of lamb with bold, salty feta and subtly spicy Sweetfire Baby Beets is a mouthwatering combo.
Beet, Walnut & Herb Dip
Break away from your store-bought (sodium and fat laden) dips and start a refreshing tradition by serving up this creamy, herby dip that has us using pita crisps to scrape the bowl in a fashion that’s not dissimilar from a toddler’s batter bowl technique. Be sure to bake plenty of pita chips: this crowd pleaser will have guests jostling for the last bite.
Beet and Shallot Salsa
Because it isn’t a true football Sunday without some variation of spicy avocado amazingness, we had to include this guacamole/salsa hybrid appetizer in our Superbowl Sunday line-up. Because the ripeness of the avocado is imperative to the dishes’ success, we have a little trick for you to test ahead of time: if the stem at the top is popped out, the ‘cado will be perfect. If it’s indented, it’s still too hard.
Beet, Salmon, Dill, and Créme Fraiche Tarts
For a warm addition to the snack food spread, we chose these crazy tasty tarts: think creamy on flaky on unctuous on earthy. The fresh dill on top will be a welcome respite from classic game day mouth-on-fire flavors, and ready-roll puff pastry makes preparation easy and presentation gorgeous.
Chocolate Beet Brownies
A sweet (beet) ending: regardless of the final score, ensure your guests (and yourself!) end the day grinning with these gooey dark chocolate brownies. A dash of chili powder and plenty of puréed beet set these brownies apart. And what’s better that having your cake and eating your vegetables too?
