We have a not-so-secret crush on root veggies – after all, our name is Love Beets. We adore those ruby orbs, not only for their superfood status, but for their culinary versatility and all around yumminess. We’ve rounded up our favorite root veggie recipes to celebrate this wonderful time of year!

Classic mashed potatoes will always have a place in our comfort-food-loving hearts, but we’ve come to prefer ours with a wider array of nutrients and a vibrant punch of color. Beet & Sweet Potato Mash with Thyme is our newfound gravy-vessel obsession, and it’s soon to be yours, too!
